摘要: IS022000标准是由国际标准化组织(ISO)于2005年9月份正式出版颁布的.IS022000标准包括HACCP体系的全部要求,并强调HACCP计划中关键控制点与前提方案和操作性前提方案的有机结合. 第一部分是ISO22000食品安全管理体系在保定某肠衣出口生产企业里建立与应用. 依据IS022000标准针对河北保定地区肠衣出口生产企业的实际生产情况建立的一套较为科学的、完整的适用于出口肠衣生产加工企业的ISO22000食品安全管理体系.通过全面的危害分析识别肠衣生产中存在的显著危害,确定了三个关键控制点:肠衣原料的验收、腌制盐的验收、加工中上盐工序控制、并确定了关键限值(CL)和预防措施,建立了HACCP计划,该研究参照HACCP计划的管理模式建立起了可操作性前提方案计划管理模式;通过HACCP计划管理模式和可操作性前提方案计划管理模式在ISO22000食品安全管理体系中有效结合与实施,将出口肠衣产品的显著危害消除、预防或降低至可接受水平,使得肠衣生产企业建立起了以HACCP计划和可操作性前提方案计划为核心的ISO22000食品安全管理体系.第二部分对建立食品安全管理体系(ISO22000)在肠衣生产企业运行效果进行验证.对已经运行ISO22000食品安全管理体系的保定某出口肠衣企业食品安全管理体系(ISO220000)进行一次HACCP计划单项验证审核策划与实施过程研究以及建立食品安全管理体系(ISO22000)前后企业对兽药残留和客户满意数据统计与分析来验证体系当前实施的有效性 ,并分析企业通过ISO22000食品安全管理体系认证前后肠衣终产品的出口需检测的氯霉素、硝基呋喃类兽药残留检出阳性率的数据统计与分析.经统计保定某肠衣出口企业氯霉素、硝基呋喃类兽药残留从未通过ISO22000认证前的2007年兽药残留检出阳性率分别为氯霉素残留检出阳性率4.34%、硝基呋喃的残留检出阳性率3.20%至2010年底通过ISO22000认证后近2年来体系的实施,2010年底统计当年兽药残留阳性率氯霉素残留、硝基呋喃的残留均为检出,客户满意度增强和产品销量增加,说明了实施ISO22000食品安全管理体系对企业食品安全过程控制的有效性. 本研究侧重对危害分析与关键控制点(HACCP)和操作性前提方案的研究其建立应用有效性验证进行探讨,研究的结果为肠衣企业建立IS022000安全管理体系及其他学者进一步的研究提供了参考.??
英文摘要: The IS022000 standard was published by International Organization for Standardization (ISO) in September, 2005. The IS022000 includes all contents of HACCP system, and emphasizes combination in critical control point of HACCP, prerequisite program and Operational prerequisite program. This paper consists of two parts, the first part researcher on the Establishment of IS022000 Food Safety Management Systems in the export of intestine and casing Processing Factory. This study founds a scientific and intact food safety management systems for intestine-casing Processing corporation, according to the ISO22000 standard, combining with the actual production practice of a intestine-casing Processing corporation in Baoding Hebei. Through the comprehensive hazard analysis to the techniques and practice of intestine-casing Processing, Veterinary drug residual checking. Accessories salt checking and salt process control were identified as critical control points(CCPs), the critical limits and the corresponding control measures were also established; Finally, ISO22000 for intestine-casing Processing corporation was established based on the effective combination of HACCP plan and operational prerequisite program. In the second part, the result of establishing ISO22000 Food Safety Management Systems in enterprises which process intestine-casing is checked. Statistics and Analysis on the Positive rate of Residues of veterinary drugs in the Final product of intestine-casing, such as Chloromycetin and Nitrofuran drugs were done between 2007 and 2010. During 2007(ISO22000 system was not implemented) the Positive rate of Chloromycetin and Nitrofuran drugs were 4.34% and 3.20% separately, yet the rate were 0 during 2010(ISO22000 system has been implemented for two years); Customer Satisfaction and Product sales were improved, proving the effectiveness of the implementation for the ISO22000 system. The result would provide references for the intestine - casing Processing enterprises to establish the IS022000 food safety management systems and other scholar's further research.??
