摘要: '大石早生'李(Prunus salicina'Oishiwase')是极早熟李品种,由于李果实的采收时值高温季节,采后呼吸代谢旺盛,果实在常温下很快成熟软化,货架期仅5-7天,严重影响了李果的流通.为探索延长'大石早生'李果实常温货架期的有效措施,本文以绿熟期'大石早生'李为材料,研究了1-MCP间歇处理、壳聚糖涂膜对采后李果实成熟衰老的影响,旨在阐明不同处理对'大石早生'李果实采后成熟衰老的调控机制,探索最佳的处理方式,从而为李果实贮藏保鲜提供理论依据.以绿熟期'大石早生'李为材料,研究了经1-MCP间歇处理后李果实成熟衰老过程中果实品质、色泽、抗氧化酶及软化相关酶活性的变化,结果表明:在常温贮藏条件下,1μl/L1-MCP间歇处理能够延缓果实硬度下降,维持较高的可溶性糖、可滴定酸和可溶性果胶含量,抑制丙二醛含量的上升,保持果实较好的品质;1 gl/L1-MCP间歇处理维持较高水平CAT活性,抑制了果胶酶和纤维素酶活性的上升,推迟了果实的软化;1μl/L1-MCP间歇处理明显抑制了叶绿素的降解及花青苷的合成,延缓了果实色泽发育.随处理次数的增加,作用效果越明显.1μl/L 1-MCP间歇处理3次的果实贮藏后期颜色不能正常转红,且口感较差.综合品质、口感与色泽,1-MCP间歇处理两次效果最好,能够在不影响果实外观品质和食用品质的基础上有效地延缓李果实的成熟衰老,使'大石早生'李果实的常温货架期延长6-7天.以绿熟期'大石早生'李为材料,研究了壳聚糖涂膜对采后李果实转熟过程中的一系列生理生化变化,结果表明:在常温贮藏条件下,壳聚糖结合赤霉素涂膜处理能够有效延缓果实硬度下降,保持较高的可溶性糖、可滴定酸和可溶性果胶含量,抑制丙二醛和花青苷含量的上升,抑制叶绿素含量的下降;壳聚糖结合赤霉素涂膜处理明显提高了CAT活性,对SOD活性影响不大,抑制了POD活性上升.可有效地延长'大石早生'李果实的常温货架期约3-4天.
英文摘要: 'Oishiwase'plums which are extremely precocious ripening species, show a typical climacteric ripening behaviour. Because of high-temperature of the harvest season and strong respiratory metabolism, the fruit rapidly ripening at room temperature with shelf life only 5 to 7 days, seriously effecting the commercial value of plums. Therefore, extending the shelf life of'Oishiwase'plums at room temperature is urgently solved. In this study,'Oishiwase'plums of green mature were used as experimental materials to investigate the effects of 1-MCP intermittent treatment and chitosan coating on fruit ripening and softening. The objective of our study was to show the effects of 1-MCP intermittent treatment and chitosan coating on quality and antioxidative enzymes of 'Oishiwase' plums, and to learn how the mechanisms might be involved in 1-MCP intermittent treatment. The results obtained as follows.The study used green mature'Oishiwase'plums as material to investigate the effects of 1-MCP intermittent treatment on quality properties, color, antioxidant enzymes and softening related enzymes during plum fruit ripening and senescence after postharvest by 1-MCP intermittent treatment. The results showed that at room temperature storage conditions,1μl/L 1-MCP intermittent treatment could delay the decreased of fruit firmness, maintain high contents of soluble sugar, titratable acid and soluble pectin, inhibited the increased content of MDA, to maintain good fruit quality.1μl/L 1-MCP intermittent treatment could maintain high level of CAT activity, inhibited the activity of pectinase and cellulase increases, to delay fruit softening.1-MCP intermittent treatment significantly inhibited the degradation of chlorophyll and anthocyanin synthesis, delayed the development of fruit color. Increasing the treatment times, the effects were much more obviously. During the post-storage the plum fruit of 1μl/L 1-MCP intermittently treatment for 3 times could not turn to normal red with poor taste. Considering taste and color, the effect of 1-MCP treatment twice best, could effectively delay ripening and softening of plum fruit based on the appearance quality and eating quality to extend the shelf-life of 6-7 days.The study used green mature'Oishiwase' plums as material to investigate the effects of chitosan coating contained gibberellin on physiological and biochemical changing during storage at home temperature. The results showed that the chitosan coating combined gibberellin could effectively delay the decline of fruit firmness, maintain high contents of soluble sugar, titratable acid and soluble pectin, inhibit the increased content of MDA and anthocyanin, the degradated of chlorophyll. The chitosan coating combined with gibberellin could effectively improve the CAT activity, inhibit the increased of POD activity, little effect on SOD activity. Chitosan coating contained gibberellin could extend the shelf-life of 3-4 days effectively.
